If you’re thinking about making Christmas cookies this year, it’s not too late. Some of the organized among us may have started a month or more in advance baking a few dozen cookies on a free weekend and freezing them to share with family and friends over the holidays. While this may have been in your plans, as it was in mine, we are now into mid-December with not a cookie in sight. Not to worry, there is still time to complete your holiday cookie baking easily in one weekend.
Begin by making a list of the cookies you’d like to bake. A simple sugar cookie is a staple and can be decorated as simply or extravagantly as you wish. Add in a few traditional cookies that are family favorites. A candy or fudge is always enjoyed. The Pioneer Woman has a list of 45 Christmas Candy Recipes and I’m going to select one or two to try.

A few regular cookies that can be made Christmassy with red or green sugar or Christmas colored M & M’s such as peanut butter blossoms, chocolate chips or snickerdoodles may also be considered. Pizzelles are an easy and quick cookie to round out your Christmas cookie list. Six or seven different cookies add a nice variety and are usually not too time consuming or overwhelming. You may choose more or less but make it a fun and relaxing time by inviting a friend or family member to help, putting on Christmas music, and sipping on hot chocolate or wine. Happy Baking!
